This technique extends the market life of highly perishable products and guarantees a long life on large – scale retail trade shelves. BIGfISH products packaged under modified atmosphere can be eaten within 10 days from the packaging date.
MAP is a technology that substitutes air with one or more inert gases combined in order to maintain the organoleptic properties of the fish. Packages are hermetically sealed.
The gas is monitored: this guarantees the perfect integrity of the product at a constant temperature of 3° - 4°C. Oxygen is substituted with nitrogen and carbon dioxide: carbon dioxide inhibits moulds and bacteria. Nitrogen stops rancidity in fats and prevents moulds forming.
