The production process is managed by competent operators supervised by a team of biologists in order to meet the required hygienic-sanitary conditions.
Fish is delivered at our premises very early in the morning. Here it undergoes a first phase of evisceration and cleaning before being transferred to the processing rooms, all of them kept under controlled temperature. Inside these rooms, the fish is threaded, sliced and prepared to be packaged.

The products are processed to prepare traditional Sicilian fish dishes and then packaged under a modified atmosphere (MAP) or frozen.
